<p>まず材料を用意します。</p>

<p>鳥のおすすめはもも肉です。ジューシーで美味しい焼き鳥ができますよ。</p>

<p>我が家は焼き鳥が大好きなため、５羽今回用意しました。</p>



<p>これを一口大に切ります。</p>

<p>せっかくなので贅沢に大きめにカットします。</p>



<p>次にカットしたお肉をビニール袋に入れ、料理酒を少々入れ揉み込みます。（臭み消し）</p>

<p>串は竹串ではなく鉄串がおすすめ！<br>鉄串が温められてお肉の生焼けが無くなります。<br>かなり大きく切っても安心です！<br>※ただし焼き立て状態の鉄串は火傷するので、素手で持たないこと！すぐに冷めるから気を付けて！</p>

<p>串に刺す際、お肉だけでもいいのですが、ネギを交互に刺す「<strong>ネギ間</strong>」がおすすめです。</p>

<p>またにんにく１片を交互に刺す「<strong>焼き鳥にんにく</strong>」も、美味しいです！<br>しかし、翌日の臭いには気を付けて下さいね。</p>



<p>串に刺したら、味塩コショウを振り塩をさらに振りかけます。焼く際お肉が汗をかくため、かなり強めに振って大丈夫ですよ！</p>



<p>わたしの塩は、岩塩または「石垣の塩」を使っています。</p>

<p>薪ストーブにゴトクをいれ、網をのせてよく温めておきます。<br>網はDAISOの網を使用しています。</p>

<p>焼き時間は熾きの火加減にもよりますが、思っているより早いと考えましょう。<br>焼きすぎるとパサパサで美味しくないので。。</p>



<p>頃合いを見て中まで火が通っていたら完成です！<br>くれぐれも鉄串で火傷しないよう気を付けて下さいね。</p>

<p>今回紹介する作り方を知れば、もう「裏が真っ黒の苦いピザ」とはおさらばできますよ！</p>



<p>また今回は薪ストーブでの紹介となりますがキャンプでも同じこと。その解説もします。</p>

<p>本格ピザはピザ窯で焼き上げるのですが、釜の中で薪を焚きながら高温でピザを焼きます。<br>薪ストーブも原理は同じですが、<strong>薪ストーブの炉内はピザ窯とは違い狭い</strong>です。<br>そのため、<strong>ピザ窯は薪の近くで焼き上げます</strong>が、<strong><span class="marker-under-red">薪ストーブは薪の上で焼く</span></strong>ことになります。<br>そのため、普通に焼こうとすると裏が真っ黒に焦げやすいのです。<br>ということは、その対策をすれば美味しいピザが焼けるはず！<br>その方法を解説していきます。</p>



<p>またキャンプや家庭の魚焼きグリルでも、今回の方法は美味しくできるのでぜひ挑戦してみてくださいね。</p>

<p>我が家はこのレシピの５倍量（５枚分)を７～８枚にしてつくります。<br>（およそ20cmほどの大きさです。）<br>各家庭でピザの大きさが異なるため、お好みの大きさ、薄さでつくってください。</p>

<p>生地の分量の材料をボウルに入れ、手で捏ねて混ぜ合わせる。<br>※ドライイーストは計量器で量らずに、<strong>小さじを使用</strong>しましょう。計量器では少ない分量がうまく量れません。</p>

<p>暖かい場所に置くと発酵が進みます。<br>薪ストーブで作る際は、ストーブの近くに置くと発酵が進みますよ。</p>

<p>30分ほど発酵させます。<br>すると生地がふくれているはずです。発酵が進んだサインです。</p>

<p>次に生地を切り分けます。パンとは違い２次発酵は考えなくても大丈夫！<br>切り分けた生地をのばしましょう。</p>



<p>まずはまな板などに打ち粉をします。<br>打ち粉は強力粉でも薄力粉でも大丈夫。材料の分量とは別に適量ふります。</p>

<p>大人は<strong>マルゲリータ</strong>はやはり外せませんよね。<br>トマトソース、モッツァレラチーズ、バジルの葉。<br>そこに塩とEXエキストラバージンオリーブオイルを少々かけて焼くだけ。<br>最高に美味しいです♪</p>



<p><strong>サラダピザ</strong>もおすすめです。<br>個人的にはピザソースを塗らない方が好きです。<br>焼きあがったピザに、レタスやルッコラ・トマトに生ハムやベーコンをのせてドレッシングをかければ完成です。ドレッシングを自分で白ワインビネガー・岩塩・ブラックペッパー・オリーブオイルでつくっても美味しいです！</p>

<p>寒い時期の薪ストーブには暖房用途以外に、楽しみがあります。<br>それは料理です。<br>家にいながらに、焚き火料理やキャンプ感覚のオーブン料理ができるのです。</p>



<p>今回は薪ストーブで焼きしいたけをつくります。<br>今回のしいたけですが、なんと自家栽培に成功したので、初物の採れたてで作ることになります。</p>

<h2 class="wp-block-heading"><span id="toc2">焼きしいたけの作り方</span></h2>



<h3 class="wp-block-heading"><span id="toc3">しいたけは洗わない</span></h3>



<p>庭で自家栽培をした経験からいうと、砂埃がついているため正直、洗いたい。<br>しかし、きのこ類全般に言えますが、風味が落ちるため洗ってはいけません。<br>布巾で拭く程度にしましょう。<br>わたしはしいたけのかさの部分を、布巾の乾拭きでパッパッとしたあと、濡らしたキッチンペーパーでサッサッと拭きました。</p>



<p>今回は薪ストーブに入れるため、軸は切らずにそのまま焼きます。<br>石づきはキッチンバサミで切り落としましょう。</p>



<h3 class="wp-block-heading"><span id="toc4">あとは薪ストーブで焼くだけ</span></h3>



<p>あとは網にのせて焼くだけ。<br>薪ストーブの熾が少なくなったタイミングで、炉内に五徳を置き、網をのせたら用意完了です。</p>



<p>しいたけのかさの内側に塩を少々ふり、網の上にのせ焼き始めます。</p>

<p>３〜４分経ち、しいたけの香りがしてきて、かさの中に汗をかき始めたら食べ頃です。<br>火加減・しいたけの大きさにより時間は前後します。</p>



<p>※裏返さないように注意です。<br>せっかくの美味しいエキスが流れ出てしまいます。</p>



<h3 class="wp-block-heading"><span id="toc5">食べるときのおすすめ調理料</span></h3>



<p>断然、塩がおすすめです。<br>今回使った塩は、以前石垣島に旅行に行った際、買ってきたこちらの塩</p>

<p>他にも醤油、ポン酢、マヨネーズと何でも合います！<br>ただし、焼く際に塩をふっているので、味が濃くならないように、少しずつ足しましょう。</p>



<h3 class="wp-block-heading"><span id="toc6">市販のしいたけとフライパンでも美味しくできます</span></h3>



<p>作り方は一緒で、焼く際にフライパンに少々の油をひき、塩を振ったしいたけを並べたら蓋をして焼きます。<br>※フライパンの際は軸は切りましょう。<br>ある程度火が入ったら蓋を開け、１分程焼いたら完成です。<br>ふっくら美味しい焼きしいたけができますよ！</p>



<h3 class="wp-block-heading"><span id="toc7">グリル・トースターでも美味しくできます</span></h3>



<p>フライパンの調理と同じですが、焼く際にアルミホイルに包みます。<br>この蒸し焼きがふっくらと焼くポイントです。<br>そのまま焼き上げても、最後にアルミホイルを開いて１分香ばしく焼いても、どちらも美味しいですよ。</p>



<h2 class="wp-block-heading"><span id="toc8">しいたけ栽培のすすめ</span></h2>



<p>自家栽培した「しいたけ」は肉厚でまさにステーキ。<br>こんなステーキが一度成功すると２〜４年楽しめるので、しいたけ栽培もおすすめですよ。</p>



<p>わたしは原木にしいたけ菌の駒を打ちましたが、こんな栽培キットでも手軽に作れます。<br>自分で育てた「しいたけ」の肉厚ステーキを是非楽しんでみてください。</p>

<p>と、丁度同じタイミングで、ご近所さんから「さつまいも」と「栗」を頂きました。</p>



<p>「さつまいも」を見ると子供達は「焼き芋！」と思うらしいので、「じゃあ」と薪ストーブで焼き芋と焼き栗を作ることにしました。</p>



<p>ということで、せっかくなのでレシピ紹介します。</p>

<p>ボールに水を張り、中に栗を入れ一晩置きます。（虫だし）</p>

<p>コツはなるべく火(熾き)は少なく、ゆっくり作ると失敗しません。</p>



<p>しかし冬の寒い時期は、そのために薪を焚かずに火を少なくすると、薪ストーブが冷えてしまい、また暖かくなるのに時間がかってしまいます。</p>



<p>そのためにも、概ねの目安をそれぞれ示したいと思います。</p>

<h3 class="wp-block-heading"><span id="toc7">灰受け皿で焼き芋</span></h3>



<p>今回は薪ストーブの炉内に入れましたが、灰受け皿に入れる方法があります。<br>焼き芋の用意は全く同じですが、熱量の少ない灰受け皿に入れることにより、焦げの心配が無くなります。<br>ゆっくりと時間をかけて熱が入るため、美味しい焼き芋が出来ますよ。<br>我が家の薪ストーブは灰受け皿が小さいので、細い焼き芋でしか使えません。</p>

<h3 class="wp-block-heading"><span id="toc8">ダッチオーブンで石焼き芋</span></h3>



<p>ダッチオーブンに綺麗に洗った玉石（河石）を少し敷き詰め、タワシで洗ったさつまいもを入れます。<br>隙間に玉石を満遍なく入れ、蓋をしたら準備完了。<br>炉内にダッチオーブンをいれ、１～２時間程経つと皮がパリパリの美味しい焼き芋の完成です。</p>



<p>我が家の薪ストーブは小さく炉内に入る<a rel="noopener" target="_blank" href="https://www.lodge-cooking.com/product/detail/19240058000002/">ダッチオーブン<span class="fa fa-external-link external-icon anchor-icon"></span></a>では、ミニミニサイズのさつまいもしか入りません。<br>せめて10インチのダッチオーブンが入る薪ストーブでないと、手間がかかり過ぎるのでやりません。</p>

<p>栗を水に一晩入れておくところまでは同じです。<br>次に栗を洗ったら、ペーパーで水気を拭きます。</p>

<p>この上に、網を敷き、栗を並べたら準備完了。</p>



<p>火加減ですが、直火のため火は少ない方が焦げなくていいですね。</p>



<p>あとは焼き上がるまで、待ちましょう。<br>香ばしい香りの焼き栗の完成です。</p>



<p>手間はかかりますが、美味しいですよ！</p>



<h2 class="wp-block-heading"><span id="toc10">まとめ</span></h2>



<p>今回の火加減は、細めな薪を３本入れて叩いて（触って）崩れる位の薪の状態で、空気を絞り、焼き芋・栗を投入しました。</p>



<p>火加減が弱くゆっくり熱が入るため、すぐには焦げず、子供と遊んでいる間に勝手に出来上がります！</p>



<p>実際、公園に遊びに行ったら、焼き芋の事をすっかり忘れていました。<br>帰ってきて「あっ！」と思いましたが、焦げること無くトロトロな美味しい焼き芋・焼き栗が完成していましたよ。</p>



<p>自動調理＋暖房！これは薪ストーブユーザーの特権ですね！</p>
